I Need Your Help

Mr. P loves Mac and Cheese. I usually don't make it because I can't eat it and I'm not a huge fan of making things I can't eat these days. So last night I had to work really late I picked up all the ingredients for Mr. P and printed off an Alton Brown Recipe so Mr. P could make himself mac and cheese for dinner. Mr. P is learning to cook, but that is a whole different story for a different day. I thought he would be thrilled and delighted at the wonderful homemade mac and cheese. I thought wrong.

It wasn't quite right. It wasn't thick and gooey enough, it shouldn't have bread crumbs, why was there a bay leaf and paprika, and so on. It sounds to me what he wants is kraft. He assures me it's not. He wants to make homemade mac that is like kraft but cheesier and better.

So I need ideas, recipes, family secrets concerning mac and cheese, ideas, please send them my way and it will be much appreciated.

  1. Oh girl, perfect timing! I have a mac n cheese recipe that I absolutely love, and its super easy to make. You do it in the microwave! Well most of it. I made it for the christmas potluck at church...but accidentally ate half of it before I made it out the door. ::blush::


    1 package (5 oz.) spiral macaroni (or 1 cup dry elbow macaroni)
    3 tablespoons butter or margarine
    3 tablespoons flour
    1 teaspoon dried chives (found in grocer’s spice section)
    ½ teaspoon salt
    Dash of white pepper
    Dash of cayenne pepper
    1½ cups milk
    1 cup shredded Cheddar cheese
    1 cup shredded Monterey Jack cheese
    1½ tablespoons seasoned bread crumbs (I use Italian seasoned)


    Cook macaroni conventionally while microwaving sauce. In 2-quart casserole melt the butter at HIGH 45 to 60 seconds. Stir in flour and seasonings until smooth. Microwave at HIGH 30 to 45 seconds, or until bubbly. Blend in milk. Microwave at HIGH 4 to 7 minutes, or until thickened, stirring after every minute.

    Mix in cheeses until melted; if needed, microwave at HIGH 30 seconds. Stir in macaroni. Microwave at HIGH 3 minutes. Stir; sprinkle with bread crumbs. Microwave at HIGH 2 minutes, or until thoroughly heated.

    Makes 6 servings

  4. I make Mac n Cheese quite often and with raves from the husband here is my recipe.

    -In saucepan cook
    half of an onion, chopped in 4 Tbs butter
    -Once golden add
    4 Tbs flour and
    1/2-1 tsp dijon mustard
    -Remove from heat and stir in 2 cups milk
    -Return to heat and simmer until white sauce thickens
    -Add salt and pepper and about 2 cups of grated cheddar cheese to taste

    Serve with cooked macaroni or shell pasta!

  5. Sometimes when I'm lazy, I just use Velveeta, some dried herbs (particularly basil), and cavatappi noodles. It's nothing special, but it's easy as can be and it's definitely ooey and gooey.
